Strawberry Sorbet

A few weeks ago we picked 33 pounds of strawberries at a u-pick farm.  We made jam, pie, smoothies, froze some berries, and ate some plain.  I decided it would be fun to try to make a frozen dessert since ice cream is out of the question for a few of us. 

I have never made sorbet before, so I really don't even know if this recipe is officially sorbet.  Also, I wanted to make it so that you wouldn't need an ice cream maker to make this tasty frozen treat. 


This recipe is free of wheat, soy, dairy, eggs, tree nuts, and peanuts.


Strawberry Sorbet

5 Cups of Pureed Strawberries*
2 to 2 1/2 Cups Sugar

Combine the strawberries and sugar and pour into an 8 in. x 8 in. glass baking dish.  Cover and put the dish into the freezer until the mixture is frozen. 

*I pureed the strawberries in my blender until there were no lumps.  Also, I used 2 1/2 cups of evaporated cane juice, but I am pretty sure I could have gotten by with just 2 cups.
