Chocolate Pancakes

I decided to use some chocolate Rice Dream I had purchased to make some pancakes. (I promise I do make more than just pancakes.) I made a small batch and they were eaten with no complaints by my youngest two children.

This recipe contains no diary, eggs, soy, wheat, peanuts or tree nuts.



Chocolate Pancakes

1 1 /2 Cups Chocolate Rice Dream (or any dairy free chocolate drink)
Egg Replacer Equivalent to 1 Egg
2 Tbsp. Extra Virgin Olive Oil
1 Tbsp. Ground Flax Seed (Use a coffee grinder for this.)
1 Cup Gluten Free Pancake Flour
1 Tbsp. Sugar
1 Tbsp Baking Powder
1/2 tsp. Sea Salt
1/4 tsp. Xanthan Gum

Preheat a griddle on medium low heat. In a bowl mix the rice milk, oil, and flax seed with a whisk or fork until blended. In a separate bowl, combine all remaining ingredients with a whisk or fork. Add dry ingredients to wet ingredients and stir until combined (do not over mix). Pour the pancake batter on the griddle in approximately 1/4 cup increments. Turn them over when bubbles have formed on the top or they are golden brown on the bottom. Cook on the other side until golden brown. Remove from heat and repeat until all batter has been cooked.

These look really good, although I wouldn't be able to eat them because of my acid reflux. I can only use millet and buckwheat grains and no processed sugars.

It must be so hard for you having a child with allergies. I know what I go through daily and can not imagine dealing with it as a child.

I have been reading a lot about processed sugars and found it causes us a whole lot of problems, including acid, kidney and many more. In June I gave up processed sugars and by August I no longer took pills for my bladder problem.
